While you can buy popsicles in any grocery store’s frozen foods section. You cannot ignore the fact that many are containing artificial colors and tons of sugar, so why not try your hand at making your own? Plus, they’re super easy to make! Our version contains just ripe fruit and coconut milk, making them good sources of vitamin C and healthy fatty acids.

Ingredients

2 cups fresh pineapple, cubed
1 cup raspberries, rinsed
3/4 cup unsweetened coconut milk

Preparation

  1. Combine pineapple, raspberries and coconut milk together in a blender until smooth.
    2. Fill disposable paper cups or popsicle molds ¾ of the way full.
    3. If using paper cups, cover with foil and poke a wooden popsicle stick through center of foil, so the stick stands straight up. If using molds, put lids on.
    5. Freeze for about 5 hours.
    6. Once frozen, remove foil and peel off paper cup, or remove the popsicle from its mold.
    7. Enjoy.
